Joy – Jamaican Bread Pudding

Cooking instructions

1.

Shred the bread and place in a pre greased, suitable sized baking dish

2.

Melt butter for between 15-30 seconds then let cool

3.

Pour milk into bowl, add the sugar, vanilla essence, nutmeg, cinnamon, mixed spice and pinch of salt, then mix well | Ensure the sugar dissolves fully | Add the cooled butter to the milk

4.

Beat the eggs well, then add into the seasoned milk and mix well | Pour the mixture over the shredded bread and ensure all the bread gets covered

5.

Add the soaked sultanas and spread evenly | Leave the bread mixture soaking in the milk for at least 30 mins

6.

Place in a pre heated oven at 180 degrees on the middle shelf for 1hr | Cook until golden brown

7.

Take out and leave to cool for 1hr

Ingredients:

  • 8 Slices of bread (any type of bread)
    1 to 1.5 tea cups of sultanas
    1 tbsp of white rum (optional)
  • 1 litre milk (any preference)
  • 1 tbsp vanilla ssence
  • 6 tbsp sugar
  • 2 eggs
  • 4 tbsp melted butter
  • 1 tsp ground nutmeg
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • Pinch of salt
